How could we not use Frederiksdal cherries when doing a fruit-forward collaboration with them. A long time ago I was introduced to the unique cherry variety \"Stevns\" after trying the legendary SpontanCherry Frederiksdal from Mikkeller. That further got me into Frederiksdal's extraordinary wines, and guess my surprise when I found out I could get the same variety in my neighbouring town.\u003cbr\u003e\u003cbr\u003eOver ten years later I received 500 kg of frozen cherries from Frederiksdal, and it feels like coming full circle doing a mead with both cherries together!\u003cbr\u003e\u003cbr\u003eA two-week long maceration gave loads of soft, supple tannins and color, and only free-run juice was collected. As a cherry on top, the Norwegian cherry part was cryo-concentrated.\u003cbr\u003e\u003cbr\u003eIt's a cherry bomb without a doubt. But the forest honey shines through beautifully and puts its marks on the mead with sweet notes of dark caramel and chocolate.
