As we settle into the journey with our Tasman IPA series, we’re applying the process to some big hitting yet temperamental New Zealand hops that we’ve always loved in the drier, clearer IPAs.

For the science bit: Tasman IPAs have reduced kettle hop additions, thus reducing base bitterness. The dry hops are added individually for predetermined contact times and completely removed before the next variety is added. This contact time, between 12-48 hours depending on hop variety, is considerably shorter than traditional IPAs. This creates an ultra clean hop profile.

For the flavour bit: An initial 48-hour addition of Citra provides a full spectrum citrus base whilst 24 hour additions of New Zealand hops Rakau and Nelson Sauvin and a 12 hour Vic Secret addition provide resinous grapefruit and lifted floral notes to create a balanced, rounded IPA.
