After some time and contemplation on this beer style we've decided to give it another crack. While we thoroughly enjoyed Grandma's XO, our cold IPA collaboration brewed with our mates/hop addicts at Mountain Culture, Jess and I were left a little perplexed as to what really differentiates this beer style from an India Pale Lager or, really, a West Coast IPA (outside of using an ale yeast). After doing some research on the ol innernets what we have been able to deduce is a cold IPA, by definition, is effectively just a crisper version of a traditional IPA. This being the result of using Pilsner malt as the base malt vs an ale malt which tends to leave more residual sugar (sweetness and body) in the finished beer.
This particular beer is slightly hazy, brewed with heaps of pilsner malt, fermented with our house lager yeast and contains very little residual sugar. Its near bone-dry and crispy as. We brewed it with an out-of-sight combination of Falconers Flight, Huell Melon, Mosaic and Citra hops. New world hop characters abound; tropical aromas interplay with ripe fruit flavours and a supportive bitterness keeps the elbow bent.
