Late Nights 2 is the sixth release of our Barrel-Aged Stout program and this year we've taken inspiration from late night diner treats. Late Nights 2 is a rich and decadent Imperial Pastry Stout, aged in Heaven Hill and Cape Byron Distilling whisky barrels, conditioned on layers of banana, cinnamon and buttermilk pancakes. Pitch black in the glass, with a gorgeous cascading espresso crema head, pouring dense and persistent. The aromas are bursting through with warm cinnamon and ripe banana closely following, layered over a subtle long black coffee character. Those aromas carry straight through to the palate with notes of cinnamon and banana anchored by sweet maple syrup and dark raisin, evoking a hot stack of pancakes fresh off the griddle. Roasty espresso bitterness cuts through the sweetness and keeps it honest. Vanilla Oak from the barrels are imparting a nice warmth underneath it all. The finish is long and indulgent, carrying a soft mouthfeel that’s thick like motor oil with a clean char and roast from the barrel lingering after each sip.
