Tried & True is a brand new West Coast DIPA that we've blasted with a kiwi heavy combo featuring Nelson Sauvin, Nectaron and Chinook at a 2:1:1 ratio in the dry hop and a chunky hit of Riwaka Amplifire pellets in the whirlpool which are really playing ball in this beer. We've kept things lean and clean on the malt side with predominantly Pilsner malt to keep the colour light and let the ferment rip to ultra dry - which it has. On the flavour side of things, this is a perfect rendition of new school kiwi West Coast style. It's bold and impactful, with Nelson dank, Riwaka diesel and passionfruit, yet with a playfulness and boisterous note that keeps it fun and fresh. Chinook brings in a really solid backing of pine and citrus that tie into the kiwi notes perfectly. The bitterness is long-lasting and perfectly balanced to the fruity notes of the hops. To summarise; lean, clean, bitter, dank, diesel, citrus and pine - with a crispy and dry palate that lets hops be hops.
