Tasting Note
Delicate pink in colour. Ethereal, complex aromas of rose petals and white strawberry, with soda and ozone characters. These high notes blend with subtle aromas of fresh baked brioche, rose hip and the sweet smell of briar. The palate is pure elegance, the epitome of Tasmanian Pinot Noir expressed as Turkish delight, strawberries and raspberries. These blend harmoniously with a fine, creamy texture and richness in the mid-palate, adorned by delicate roasted almond nougat from time on yeast lees.

Treatment
The grapes were handled gently during harvest and in the winery. Fermentation in aged French oak barrels for nine months is followed by tirage and secondary fermentation in bottle. The wine was disgorged after 38 months of ageing on lees to develop complexity and sophistication.
